1 ekor ayam dipotong 14
15 tangkai cili kering - kisar 10 ulas bawang merah- kisar 3 ulas bawang putih -kisar 2 cm halia - kisar 2 cm belacan dibakar sekejap 2 cm kunyit hidup - kisar 2 sudu kerisik |
1 liter santan pekat
500 ml air 3 batang serai - ketuk 2 keping asam sedikit garam dan gula minyak untuk menumis |

1. Ayam dibersihkan dan digoreng. Ketepikan. Panaskan minyak dan tumis bahan yang dikisar hingga wangi. Masukkan belacan. Kacau rata. Setelah agak garing, masukkan santan pekat, air, serai dan masaklah sampai agak pekat. Setelah itu, masukkan ayam , kerisik, asam, garam dan gula. Masak sampai kering .Tabur bawang goreng. Belacan Fried Chicken

Ingredients:
4 boneless chicken thighs and 2 boneless breasts, cut into bite-sized pieces (or one chicken, cut into 16 pieces)
3 Tbsp oyster sauce
4 heaping Tbsp cornstarch
scant 2 Tbsp roasted and ground belacan (fermented shrimp paste)
1/2 tsp salt
2 tsp roasted sesame oil
2 sprigs curry leaves, stem removed (optional)
2-3 cups peanut oil or canola oil

Method:
1. Mix all the ingredients except for the oil together with the chicken pieces and let it marinate for at least 3 hours.

2. Heat oil in wok. Use chopstick test to check oil is hot enough
(stick wooden chopstick in oil and if it bubbles out the end, it’s hot
enough).
3. Slowly drop chicken pieces into hot oil and turn every so often to brown evenly. Do not crowd the pieces so that the oil doesn’t drop in temperature too much. The chicken should bubble vigorously as it fries. Don’t worry if the curry leaves fall out, it’s delicious to munch on the leaves on its own.

- 2 ulas bwg besar
- 2 ulas bwg putih
- 2 btg cabai besar
- 2 cili padi
- 1 btg serai
- halia sebesar ibu jari
- belacan sebesar ibu jari
- 1 biji limau kasturi
- 1/2 sudu teh garam
- 1 1/2 sudu mkn gula
- sedikit perasa
- 2 sudu mkn minyak masak
- 1/2 cwn air
- 2 sudu mkn sos cili
- 2 1/2 sudu mkn kicap manis
- 5 ketul aym(siap d goreng)
Cara-cara
- tumbuk bwg besar,bwg putih dgn cabai besar 1 btg shgga hancur..kemudian hiris serai kecil2 dan tumbuk sekali smpai hancur.masuk kan halia dgn belacan,tumbuk sekali lg smpai hancur..
- panas kan minyak masak..masuk kan bahan tumbuk td kacau sehingga bau..masuk kan air,sos dan kicap..kacau rata..kemudian masukkan ayam..biar seketika dahulu..
- hiris cabai besar,cili padi..masukkan dlm masakkan td..perah limau kasturi dlm masakkan..kacau sehingga rata..biar sampai masakkan menjadi pekat..
- siap untuk di makan bersama nasi putihh..
